The recipe serves 4 people
250g fresh strawberries
2 Tablespoons honey
1/2 teaspoon agar-agar
Yoghurt Cream (previous recipe) or your choice of cream
Fruits (your choice) for arrangement
Blend the strawberry in a food processor.
Add the honey and mix until combined.
Bring to the boil 50ml water and add agar-agar.
When the agar-agar has absorbed, pour it into the strawberry mixture. Mix to combine but be careful not to overwork the mixture.
Divide the mixture between 4 glasses. Place the glasses in the refrigerator on a slight angle (instead of sitting flat), using a tea towel to support them.
After 2 hours top up the glasses with Yoghurt Cream.
Arrange the fruits of your choice on top of the Yoghurt Cream.
