Spring vegetables with rice
The recipe serves 2 people
Ingredients
2 small carrots – chopped
I small onion – chopped
2 peppers – chopped
2 small courgette – chopped
1 1/2 cup cooked rice
4 Tbsp olive oil
4 Tbsp chives or spring onion – finely chopped
1 ts ground coriander
salt for taste
Method
1. Place the vegetables in the frying pan and add 1 1/2 cups of water
2. Cook till vegetables are soft and the water evaporates
4. Add the oil and stir
5. Add the rice and the remainder of the ingredients. Mix well.
6. Remove from the stove and serve immediately.
