Roasted Courgette
INGREDIENTS
4 Medium Zucchini
1/2 cup White Flour
Olive Oil
Salt
METHOD
Preheat oven to 180 degrees Celsius
Wash and peel the zucchini and cut length ways into slices about 5mm thick.
Place slices in a bowl, put salt on them and mix, let it stand for 15 minutes.
Once 15 minutes has passed, drain the excess liquid.
Roll the slices in flour and place in a greased baking dish and sprinkle with olive oil
Bake until golden brown
