Gourmet Green Salad
Ingredients:
1 Cucumber, peeled and chopped
1 Green Capsicum, chopped
Handful of Parsley, finely chopped
Handful of Dill, finely chopped
1 Celery Stalk, chopped
1 Asparagus Stalk, chopped
Handful of Sprouts (any kind)
Handful of Chives/Spring Onion, finely chopped
1 bunch of Spinach, chopped
Any other green vegetables of your choice
1/4 Cup Green Pepitas
1/2 Cup Yoghurt
3 Tbsp Olive Oil
Salt for taste
Method:
1. Place vegetables in a medium sized bowl and stir to combine
2. Add yoghurt, olive oil and pepitas to the vegetables. Stir to combine
3. Garnish your salad with some chives or spring onion
4. Enjoy your healthy green salad!
