Chick-peas with cauliflower
This recipe serves four
For the base
4 handfuls baby spinach
For the sauce
1 cup yoghurt
1 tsp mustard (if you like)
3 Tbsp lemon juice
4 Tbsp olive oil
Salt
For the meal:
1 head cauliflower (medium size)
1 can chick-peas (drain and rinse)
1 tsp ground cumin
1 tsp coriander seeds
1/2 tsp tumeric
1/2 tsp grounded ginger
1/2 tsp garam masala
4-6 Tbsp olive oil

Method
1. Cut the cauliflower into small pieces and place them in the bowl
2. Add chick-peas, all seasonings and the oil and mix well
3. Place the mixture in greased baking dish and bake until light golden brown
4. Arrange the meal as pictured
5. Enjoy!
